Kefir Flatbreads with Fried Onion

Ingredients
- Bread Flour 3 cup
- 2.5% Fat Kefir 1 cup
- Eggs 1 pcs
- Vegetable Oil 2 tbsp
- Baking Soda 0.5 tsp
- Salt to taste
For the Filling
- Onion 3 pcs
- Salt 1 pinch
- Vegetable Oil 2 tbsp
Directions
Step 1

Take the kefir and egg out of the refrigerator ahead of time to bring them to room temperature. Peel the onion. Prepare a frying pan.
Step 2

Dice the onion. Heat 2 tbsp vegetable oil in a frying pan over medium heat, add the onion. Sauté for 2–3 minutes until soft.
TipAdd 1 tsp sugar and increase the sautéing time to 5–7 minutes, so the onion develops caramel notes.
Step 3

Pour 2.5 cups of flour into a bowl. Add the egg, kefir, baking soda, and salt. Mix everything thoroughly. Gradually adding the remaining flour, knead a soft dough. It should not stick to your hands. Cover the dough with plastic wrap and let it rest for 10 minutes at room temperature.
Step 4

Lightly flour your work surface. Divide the dough into 4 equal parts, form each into a ball, and roll it into a circle 5 mm thick. Place 1 tbsp of the sautéed onion in the center of each circle, bring the edges to the center, and pinch tightly to seal. Gently roll each filled 'pouch' into a thin flatbread.
Step 5

Heat 0.5 tbsp vegetable oil in a frying pan over medium heat. Place a flatbread and cook for 1.5–2 minutes per side until golden brown. Add another 0.5 tbsp of oil and cook the next flatbread. Repeat until all the dough is used.
Step 6

Serve the flatbreads hot with any spreads: cream cheese, pâté, or cottage cheese with herbs.
