- Eggs 3 pcs
- Gouda Cheese 65 g
- Salt 0.5 tsp
- Ground Black Pepper 0.5 tsp
- Potatoes 2 pcs
- Red Onion 1 pcs
- Green Onion 3 stalk
- Vegetable Oil 4 tbsp
Directions
Step 1

Wash and peel the potatoes. Prepare a skillet with a lid and a grater.
Step 2

Crack the eggs into a bowl. Add salt and pepper. Whisk until smooth.
Step 3

Finely grate the cheese and mix it with the eggs.
Step 4

Slice the potatoes into thin, almost translucent rounds. Dice the red onion finely and chop the green onion stalks.
Step 5

Heat the skillet with vegetable oil and, stirring, sauté the red onion until golden, about 1 minute.

Add the potatoes to the onion and continue to fry for 2–3 minutes.

Drain any excess oil from the skillet. Transfer the fried vegetables to the egg-cheese mixture. Add the green onion to the combined ingredients and mix well.

Heat the skillet with the remaining vegetable oil. Add the egg mixture and spread it evenly. Cover with a lid and cook over medium heat until the omelette is set, about 3–4 minutes. Remove the lid. Place a large plate over the skillet and flip to turn the omelette onto the plate.

Return the skillet to the stove and slide the omelette back in, cooked side up. Fry until a golden crust forms on the other side.

Carefully transfer the omelette to a plate and serve immediately, while it's still hot.
