Rice pudding with candied fruits

- Round-grain rice 1 cup
- Sugar 1 cup
- Butter 120 g
- Milk 2 cup
- Chicken egg 4 pcs
- Candied fruits 150 g
- Vanillin 0.5 tsp
- Breadcrumbs 1 tbsp
- Salt to taste
Directions
Step 1

Rinse the rice several times under running water. You'll need a large saucepan and a baking dish (preferably ceramic). Prepare a whisk and a bowl for whipping egg whites.
Step 2

Bring a large amount of water to a boil in the saucepan, add a pinch of salt. Add the rice to the water and cook for 10 minutes, stirring. Drain the rice in a colander and let the water run off.
Step 3

Return the rice to the saucepan, pour in the milk. Place on the stove and cook for another 15 minutes over low heat, stirring. Let cool slightly.
TipIt's better to use a saucepan with a thick bottom so the rice doesn't stick.
Step 4

Separate the egg yolks from the whites. Add sugar and vanillin to the yolks and rub with a whisk. Add this mixture to the rice and mix. The rice should not be hot, otherwise the yolks will cook.
Step 5

Whip the egg whites into stiff peaks in a clean bowl. Cut 100 g of butter into small cubes. Chop the candied fruits if they are large.
Step 6

Add the butter cubes and candied fruits to the pudding mixture and mix. Fold in the whipped egg whites and gently mix.
TipStir the mixture in one direction so the egg whites don't deflate. At this stage, you can add some nuts to the mixture.
Step 7

Grease the baking dish with the remaining butter and sprinkle with breadcrumbs. Fill it with the pudding mixture. Bake at 180 °C for 35 minutes. Let the pudding cool before serving.
TipIf you have a ceramic or glass baking dish, don't put it in a hot oven, as it might crack. It's better to place it in a cold oven and then set the required temperature. In this case, the baking time will increase by 10–15 minutes.

Garnish the finished pudding with berries and drizzle with chocolate or vanilla sauce.
